Holiday Zest Delight Bundt: Orange Steamed Pudding

Ingredients (serves 4)
1 stick unsalted butter, soft
1 cup sugar
4 large eggs
2 cups all-purpose flour
2 tsps double-acting baking powder
½ cup fresh orange jiuce
1 ½ tbls grated orange rind
1 ½ tbls grated lemon rind
Instructions
Butter 1 qt mold well
In large bowl, cream butter, add sugar a little at a time, beating,
Beat mixture til fluffy. Add eggs one at a time, beating well.
Into a bowl, sift together the flour and baking powder and add mixture to the butter mixture, alternately with orange juice. Stir in orange and lemon rind.
Set rack in bottom of large kettle. Add water to reach 3” up side of mold. Bring water to boil and keep at brisk boil, covered. Spoon batter into mold and color with lid. Place in pan and cover. Steam for 2 hours, checking that water is boiling only briskly. Add more water if necessary. Set on rack to cool for 15 minutes, unmold onto plate.
HARD SAUCE
Cream 3 tbls unsalted, soft butter
Add 1 cup confectioners sugar
1 tbps tasty orchard orange
Beat til fluffy
